Sidmouth baker creates Victoria sponge 'cookie pie' for Queen's Platinum Jubilee

A Sidmouth baker has created a unique Victoria sponge 'cookie pie' to mark the Queen's Platinum Jubilee.
Liv Brown, 26, the owner of Browns' Kitchen Bakery, came up with the idea for the patriotic treat.
She explained: "It's a Victoria sponge cake within a cookie pie.
"A cookie pie is layers of baked cookie, and then in the middle are different sauces."
Sidmouth College alumna Liv grew up in the local area, and opened Browns' Kitchen Bakery in November 2020 then in earnest in March 2021.
She now runs the business and is assisted by her mum Louise and sister Sarah.
Having worked in the hospitality trade since she was 14, Liv used to bake cakes for Browns' Kitchen Restaurant, which was open on Sidmouth high street from 2017 to 2019.
She said: "I then started taking on a few celebration cakes as well. When we sold the restaurant, I decided to do the cakes full time - but it was just me making celebration cakes.
"When lockdown hit, we started doing deliveries of traybakes and things.
"It just grew and grew, and then we decided to take the plunge and open the shop, in the middle of lockdown, which was a bit of a risk, and I was six months pregnant!
"I've always been very mathematical but baking allows me to be creative. Making up different flavour combinations that people seem to love, it's just nice."
With 18 different changing varieties of traybake on offer, and free samples with hot drinks, milkshakes, and smoothies, Browns' Kitchen Bakery is a must on any visit to Sidmouth.
